Yeah, I refuse to climb at the local limestone crag (it's all trad). First off the routes really aren't that good or worth the drive, and secondly I know two people who have broken their backs from gear ripping, or rather the rock around the placements breaking. Ugh. Unfortunately my stomach seems less tolerable as the years go on. The funny thing is though that certain varieties, like jalepeno, bother it more than others. Doesn't seem to have as much to do with the actual spice level as the oil used. Hence I've been leaning towards Thai chilis for the spicy end and a breed called the Red Fresno for a replacement of mild chilis like jalepeno.

The cayennes are pretty flavourless, but spicier than the jalapenos by a fair bit. Last year they were the only peppers that we had that did really well so we dried a bunch, but are still going through the ones in the freezer. If we use them up this winter I might try the Thai next year, it would be good to have something with a little more flavour.

Was your cayenne dried? I've never seen fresh cayenne. I'd highly recommend Thai peppers, they're fairly stable and have a better taste that just about any other, IMHO. They are a step up in spice though. Habenero is good for cooking too but I'm not crazy about the flava. you're turning more into Martha every day. These are things I figured out while developing my Sphincters of Syphilis Chili recipe a couple years ago. hey blutarski, those tasty little yellow hot peppers that are usually sitting out at burrito places and hamburger shacks ... what are they? Wax peppers or banana peppers. I've heard both names used but I'm not sure if they're synonomous. Most of them aren't hot whatsoever, but every once in awhile you find some that are, so I'm assuming it's different strains.
