When you hear Spanish climbers (for me, in videos), you always hear them call out "Benga!" Now I always thought they were saying "Venga" which never made sense to me but which I figured had a special meaning for the given circumstance. But then I read an article that spelled it as 'Benga, with the apostrophe. So what is 'Benga short for? If that's even what it is?

I don't know what article you are referring to. But "benga" does not have any meaning in Spanish. Probably it's misspelled in the article. The correct spelling is "venga", having exactly the same cheering purpose than "come on" in English. It might sound like "benga" to a non Spanish speaker since in Spanish (at least in Spain) "v" is pronounced like "b". There is no use of apostrophes in Spanish. Perhaps whoever wrote that apostrophe either did not have the opening exclamation mark "¡" or was misled by the common way of writing "come on" as "c'mon"... I don't know.

It does mean "come on" in Castilian Spanish. ...a muerte bicho!
