I have steep ice boots and step-in crampons and I have low angle ice boots and hybrid crampons. My low angle (La Sportiva Trango) is super comfy and my steep (Asolo Cholatse) is rigid and is incredible.

At what point does "Low Angle" hybrid need to switch to "Steep Ice"? --edit added ? for readability--

Yes, I am pretty new to ice and so I have some questions that throw me under the bus as far as experience goes.

Is vertical to overhung steep? Or is steep strictly meaning overhung? Are hybrids good for everything up to vertical but as soon as you go vertical and probably mixed you need steep ice?

It's nice having two sets of gear as my low angle is so light and comfy. I'd like to know what the consensus is for where "steep" or (time to put on the Asolo's) starts?

A lot depends on your general climbing skill level. A decent rock climber (say solid 5.10 trad climber)can take fairly crappy gear and get up grade Vs after a bit of practice. top roped anyway. and lead 4s most likely

steep is verticle for say at least 2o feet or more. At least in my book dunno how others feel about it.

You seem to really like your (low angle) gear Maybe it will be better for you in steep stuff too. If it has good ankle support.

What you're calling "low angle" and "steep ice" is referring more to mountaineering and pure ice climbing.

If you're an easier alpine climb or glacier route most people will opt for a setup similar to your Trangos. When it comes to waterfall ice climbing most will opt for something more supportive, regardless of the grade. Having more supportive boots and crampons help even on WI2.

That said, there are many people switching over to lighter weight boots such as your Trangos, especially for mixed climbing.
