So, my gym is fairly noobtastic. Its a constant parade of crazy...yesterday it was five teenage girls in cotton short shorts (the kind I assumed people slept in), some dude yelling at the top of his lungs like a bro at the crag AND a guy instructing kids by blindfolding them and sending them up routes. Is this legit or what? I've never seen this before.

Sure is legit! Read SCC.

I wouldn't say that blindfolded climbing should be part of everyone's daily climbing training. But doing it a few times can teach you how to keep balance and climb in a slow controlled way, instead of lunging for holds. Can't very well lunge when you can't see, so you have to be able to lock off and stay balanced while you are searching for the next hold. And also, since you can't see the feet, you sort of have to remember where they were, in relationship to your body, so it develops spatial awareness (not sure if that is a proper term).

Anyway, try it yourself sometime.

I had to google SCC...Self Coached Climber, right? Sounds cool, I'll check it out. Thanks Lena!

Blind-folded climbing is a common game for after-school or climbing team programs. Sure, it might help a tiny bit with your climbing skills but it's more just for fun.
