I have always wondered how to organize a decent off a multipitch sport or trad route.

Can anyone explain this to me?

um, simply put . . . multiple rappels! most developed cliffs have fixed/permanent belay/rappel stations, otherwise you'll have to leave some gear behind (or a walk off)

oh, and the rappel route isn't necessarily the route you just climbed up on

You need to read more. Do your homework, first. Then, if you don't understand something, ask your question.

On bolts its easy..
a few pointer.
Dont let the end of the ropes go after the second/last has arrived at the belay, you can screw your self in a hurry.
Make sure all knots are out of your rope ends.
When you start to pull your ropes start to feed the end of the rope through the next chains.
And tie the ropes togeather with a bomber knot, and always stay tied into something!

On a two rope rappel don't forget to remember on what side of the bolts your knot is on. you don't want to get your rope stuck in the bolts.
