The most southern places I can think of right now are Kalymnos, Greece and Geyikbayiri, Turkey. Kalymnos I think is dry year round, though Geyikbayiri might be pretty rainy in the winter. The prime time for both places are autumn and spring but one should be able to climb in the winter... Himm, I miss the Aegean... Have fun if you go....

Southern Spain should be ok. El chorro or the costa Blanca.
