Actually, you can rent shoes from the University of Utah Outdoor Rec center. It costs more for non students, but still available.

Utah Mountain Sports also rents shoes apparently. They are right next to REI on 3300 S. Same building actually, here's their site.

REI also rents shoes. There's one on 33rd south and about 30th east, and one on 106th south right by the new climbing gym.
