If you want an in-depth book on this subject you should read "Performance Rock Climbing" by Dale Goddard and Udo Neumann. All the stuff in it is probably overkill for most people, but it gives you a real good scientific perspective on training for rock climbing.

In a sidebar on sit-ups, if you are doing tons of them without doing anything for your lower back your body will get out of balance, making sitting up straight more difficult.

Looking at you photograph (is that the latest?), i believe you need to go jogging, if that dosen't help then you need to run as if your ass is on fire for about 30 minutes.
you could also try these simple things while running. Run at a pace where you're comfortable for 10 minutes, then increase your pace abruptly, then come back to normal speed again. Thats a simple cardio vascular training for you to get into shape.
What were you doing all that time... sleeping?

Eat less. More cardio. Lift. Climb. It is pretty well documented that burning more calories than you take in will cause a reduction in weight and eventually fat loss. For fun, throw in cheat days regularly where you eat lots of stuff you shouldn't. It will keep your body from going into starvation mode. Ask any bodybuilder. It works great.
